The cotton candy machine is a machine like a big bowl, and the central part of the machine is a heating chamber with a high temperature. The heat breaks the structure of the crystals, turning the sugar into a syrup. The heating chamber has holes smaller than the size of granulated sucrose. As the sugar rotates at high speed in the heating chamber, centrifugal force ejects the syrup through the small holes to the vicinity of the "big bowl". Because the speed at which a liquid substance freezes is related to its volume, the smaller the volume, the faster it freezes. Therefore, the researchers designed the diameter of the small holes in the heating chamber to be very small, only 50 microns. So the syrup sprayed out from the small holes will immediately condense into solid sugar strands and will not stick together.
